Ingredients:
1 cup Quick Homemade Soy Milk
1/4 cup applesauce, unsweetened
2 tablespoons Soy Beginnings oil
1 egg
1-1/2 cups flour
1/2 cup Soy Beginnings soybean flour
1/4 cup sugar
1/4 cup light brown sugar -- packed
3 teaspoons baking powder
1/2 teaspoon salt
2 Granny Smith apples -- peeled and shredded (1 cup)
1/2 teaspoon cinnamon
1/3 cup Soy Beginnings Sprinkles
2 tablespoons soy margarine
3 tablespoons flour
2 tablespoons light brown sugar -- packed
1/4 teaspoon cinnamon
Directions:
1. Heat oven to 375°.
2. For the streusel topping mix the Soy Beginnings Sprinkles, soy
margarine, 3 tablespoons flour, 2 tablespoons light brown sugar and 1/4
teaspoon cinnamon - use a pastry cutter or fork to cut the margarine into
the other ingredients until you have a crumbly mixture. Set aside.
3. For the muffins mix the milk, shredded apples, oil, applesauce, and egg
until well blended. Add
the flour, soy flour, sugar, baking powder, salt and 1/2 teaspoon cinnamon -
mix until moistened.
4. Divide batter among 12 muffin cups and sprinkle with about 2 teaspoons
streusel topping. Bake
for 20 - 25 minutes, or until light golden brown.
5. Immediately remove from muffin pan and allow to cool (or serve warm).
