Ingredients:
1 1/4 cups all purposed flour
3/4 cup Soy Beginnings Flour
1/2 cup sugar
4 teaspoons baking powder
1 teaspoon salt
1/4 cup Soy Beginnings oil
3/4 cup milk
1 1/2 cups mashed bananas (about 3)
1 large egg
Directions:
1. Heat oven to 350°
2. Grease muffin pan or line with paper baking cups.
3. Sift together flours, sugar, baking powder and salt. Set aside.
4. Beat together milk, oil, bananas and egg.
5. Add dry ingredients.
6. Fill muffin cups half full. Bake 20 to 25 minutes.
