Ingredients: 342 g all-purpose flour (2 1/2 cups)
108 g low-fat Soy Beginnings Flour (24% low fat) (3/4 cup)
260 g sugar (1 cup)
124 g shortening (1/2 cup)
4.0 g salt (1/2 tsp.)
4.0 g baking soda
140 ml water (1/2 cup)
(start with 130 ml water - if the dough is too crumbly add more water)
Directions:
Mix low-fat Soy Beginnings Flour and all-purpose flour in a dough mixer (e.g. Kitchen Aid mixer) using the flat beater for 1 minute. If mixer is not available, preparation can be done by hand. Scrape down and continue to mix for 3 minutes. Use low speed. Set the flour mixture aside. Cream the mixture of sugar, baking soda, salt, and shortening using flat beater for 3 minutes. Add water to the creamed mixture. Mix for 1 minute at low speed. Scrape down. Mix for 3.5 minutes at low speed. Roll the dough in a cookie sheet using a guide roll. Bake at 400oF for 12 minutes. Any oven can be suitable but may have to determine baking time and temperature by trial.
