Soy Flour Battered Shrimp With Soy Pasta And Lobster-ginger Sauce
Ingredients:
Three-quarters cup soy flour
One and one-half teaspoons salt
One-quarter teaspoon freshly ground black pepper
2 pounds fresh shrimp, peeled and de-veined
6 tablespoons olive oil, divided
Lobster-ginger sauce
Ingredients:
2 cloves garlic, peeled and chopped
1 clove shallot, peeled and chopped
1 teaspoon chopped fresh thyme leaves
One-half cup white wine
2-teaspoons chopped fresh ginger
1-tablespoon soy sauce
1 cup plus 2 tablespoons heavy cream, divided
1-teaspoon cornstarch
2-teaspoons seafood base
One-quarter teaspoon ground white pepper
1-pound Soy 7 penne rigate
One and one half- pounds broccoli florets, blanched
Directions:
To prepare shrimp:
In a glass pie plate, combine soy flour, salt and pepper. Coat shrimp in soy flour-mixture and set aside under refrigeration.
Place a large skillet over medium-high heat. Add 3 tablespoons oil in skillet. Place half of the shrimp in the skillet and sear for 2 minutes. Turn shrimp and sear other side for an additional 2 minutes. Remove to a paper towel lined baking sheet. Repeat with remaining oil and shrimp.
To prepare lobster-ginger sauce:
Place garlic, shallot, thyme, white wine and ginger in a large skillet over medium heat. Cook until all of the liquid has evaporated, about 4 minutes, take care not to burn the ingredients.
Add soy sauce and three-quarters cup cream to the skillet, stir to combine and continue cooking until mixture has reduced by one half.
In a small bowl, combine cornstarch, seafood base and white pepper. Add cornstarch mixture to skillet. Cook, stirring until thickened, about 1 minute. Stir in remaining cream and season with additional white pepper if desired. Set aside.
Cook pasta according to package directions. Drain and return hot pasta to pot. Add reserved lobster sauce and broccoli florets and stir until coated and heated through. Serve immediately.
